David Heiner, Director of Sales, Plex Systems
David Heiner works with food and beverage manufacturers to connect their people, systems, machines and supply chains.  He currently leads a team of Account Executives at Plex Systems, with a primary focus of helping food and beverage manufacturers stay competitive and grow their business by implementing software for full visibility into plant floor operations.  He’s worked with many notable Chicagoland and US brands, big and small that both are branded and private label. 

Prior to working at Plex Systems, David has been involved in the Chicago tech industry for the past 15 years.  Previously he worked with distributors in solving challenges around warehousing and distribution. David lives in Lakeview with his wife and 4 year old twins.  He loves to run on the lake front and roots for the Sox but prefers to watch the Blackhawks!

Ben Stahl, Sales Executive, Horton Risk Advisory Solutions
Benjamin Stahl is a Sales Executive for Horton’s Risk Advisory Solutions Division. In this role, Benjamin is responsible for providing Horton clients with comprehensive, cost-effective, and innovative solutions to meet their most complex, risk-related challenges and opportunities. 

Before Horton, Ben was a Senior Account Executive at Enterprise Fleet Management. In 15 years at Enterprise, he consulted with C-level executives, owners, and presidents helping them to run a better company through a fleet management partnership with Enterprise. He gained and ensured the trust of over 125 companies and their ownership/management to provide solutions that help reduce costs, improve safety, and overall operational efficiencies.

Ashish Talati, Partner, Amin Talati Wasserman, LLP

Ashish Talati leads Amin Talati & Wasserman’s FDA practice and is one of the industry’s foremost experts on FDA regulatory matters. Ashish primarily counsels clients on matters of regulatory compliance, helping them anticipate and address regulatory issues in their day-to-day business operations and strategic planning. He also advocates on their behalf before the FDA, FTC, Customs, USDA, and other federal agencies. Tim StubbsVice President Product Research and Food Safety, Dairy Management Inc.

As Vice President of Product Research and Food Safety at DMI, Tim leads the Innovation Center for U.S. Dairy Food Safety Committee, an active group of food safety expert volunteers from dairy companies which shares best practices across companies, produces guidance documents, and runs training classes which have reached over 4000 attendees. Tim also coordinates and funds Dairy Foods & Food Safety Research Projects at Universities.

Tim has 30 years of food R&D experience in leadership roles at Kraft Foods, Sara Lee, Hillshire Brands and DMI.  He has a broad background in food science and engineering, new product innovation, process research, and food safety across a wide variety of products including cheese, milk, sauces & dressings, chilled foods, pasta, RTE meals, bakery products, and processed meats.  

Tim is on the board of directors for the Chicagoland Food Science Foundation, the editorial board of Food Safety Magazine, is a Certified Food Scientist (CFS), and holds several food processing patents.  

Alvin Lee, Center Director - Center for Processing Innovation, IFSH/IITAssociate Professor of Food Science and NutritionInstitute for Food Safety and Health

Dr. Alvin Lee is a microbiologist and virologist with more than 20 years research experience with a doctorate from the Royal Melbourne Institute of Technology in Australia. He currently leads IFSH Center for Processing Innovation and co-leads the joint IFSH/FDA Microbiology Research Platform on food safety and defense related projects. He is a member of the Executive Board of NoroCORE, a USDA-NIFA Food Virology Collaborative based at North Carolina State University, and leads the Prevention and Control CORE. Current research support includes funding from USDA, US FDA and various industry contracts that evaluate and validate preventive controls for bacterial and viral pathogens. His research focuses on various food processing technologies include high pressure processing, pulsed light, high powered ultrasound, gaseous technology and legacy thermal technologies to inactivate pathogens.

Dr. Lee is a scientific reviewer on a number of scientific journals and publications and a Lead Instructor for Food Safety Preventive Controls for Human Foods. He teaches food microbiology within the Department of Food Science and Nutrition and has mentored more than 30 graduate students and post-doctoral fellows. He is a current active member of the International Association for Food Protection and the Institute of Food Technologists.
